Sauteed Spinach

Ingredients:
1 pound fresh spinach
3 tablespoons olive oil
4 cloves garlic, minced
1/2 teaspoon red chili flakes
2 tablespoons freshly squeezed lemon juice
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Directions:
1. Bring a large pot of water to a boil. Add spinach and stir for 30 seconds. Strain in a colander. Squeeze out excess water. Reserve spinach.
2. In a saute pan over medium-high heat add olive oil. Add garlic and chili and cook for approximately 2 minutes, or until garlic just begins to brown. Add spinach and saute for 2 minutes. Add lemon juice, salt and pepper. Toss and serve immediately.
