Sauteed Rice And Tomatoes

Ingredients:
2/3 cup uncooked regular rice
1/4 cup vegetable oil
1 1/3 cups water
1/2 cup chopped onion
1/4 cup bacon drippings
2 large tomatoes, peeled and chopped
1 teaspoon salt
1/2 teaspoon pepper
Directions:
1. Cook rice in oil in a small cast iron skillet, stirring frequently, until rice is lightly browned. Add water, and bring to a boil. Reduce heat; cover and simmer 20 minutes or until rice is tender. Set aside.
2. Sauté onion in bacon drippings until tender. Add tomatoes, salt, and pepper; bring to a boil. Reduce heat; cover and simmer 15 minutes. Add rice; stir well.
