If you're watching your fat, calories and cholestrol, you can't even say Sauteed Mushrooms much less eat them. This is my recipe for Sauteed Mushrooms that you can enjoy without the guilty feelings of falling off your diet wagon. Read more . Slightly sweet and buttery flavored, these are quite a treat.
Ingredients:
fresh mushrooms
water
apple or orange juice, could also use a nice wine instead of the juice.
onion and garlic powder
i can't believe it's not butter spray
Directions:
1. Slice mushrooms in half or thirds.
2. Place mushrooms in sauce pan, rinse and add water to the top of the mushrooms.
3. Add fruit juice to cover mushrooms by 1 inch.
4. Bring to boil and continue boiling for 2 minutes.
5. Drain and discard liquid.
6. Refill pan with half water and half fruit juice, bring to boil and boil for 2 minutes.
7. Drain and discard liquid.
8. Add 1/2 water and 1/2 juice just to cover and bring to boil.
9. Sprinkle with onion and garlic powder to taste and stir to blend and remove from heat.
10. When ready to serve, reheat then using slotted spoon remove mushrooms from the liquid to individual serving dish.
11. Spritz with I Can't Believe It's Not Butter spray and serve.

13. The number of servings depends on how many mushrooms you start with. Usually mushrooms cooked this way will reduce by one half. So, 2 cups of sliced mushrooms will give you a little less than 1 cup cooked.
14. You can also use small whole mushrooms.
