Sauteed Greens W Cannellini Beans And Garlic

A GREAT SIDE DISH BUT ALSO A GOOD VEGETERIAN DINNER OVER RICE
Ingredients:
5 tbsp extra virgin olive oil (divided)
3 garlic cloves sliced thin
1/4 teaspoon dried crushed pepper
1 large bunch greens( spinich,mustard greens,kale,or my fav broccoli rabe) about 1 pound stems removed cut into 1 inch strips
1 cup or more vegetable or chicken broth (low sodium)
1 15 oz can cannelli beans rinsed drained
1 teaspoon sherry wine vinegar
Directions:
1. HEAT 4 TESPOONS OF OIL IN LARGE NONSTICK SKILLET OVER MED HEAT ADD GARLIC AND DRIED PEPPER UNTIL GARLIC IS GOLDEN ABOUT 1 MIN.
2. ADD GREENS BY THE HANDFUL STIR UNTIL BEGINNING TO WILT THEN ADD MORE TOSS TO COAT.
3. ADD 1 CUP BROTH COVER AND SIMMER UNTIL GREENS ARE TENDER, ADDING MORE BY TABLESPOON IF DRY.
4. ADD BEANS SIMMER UNCOVERED UNTIL BEANS ARE HEATED THROUGH AND LIQUID IS ALMOST ABSORBED ABOUT 2 MINS.
5. STIR IN VINEGAR.
6. SEASON WITH SALT AND PEPPER
7. DRIZZLE WITH MORE OLIVE OIL
8. ENJOY!!!!!
