Sauteed Escarole With Gigante Beans

Ingredients:
dark leafy tops of two bunches of escarole (washed and trimmed)
about 1/2 can of goya giant white beans (gigante in italian)-rinsed
2 cloves of garlic roughly chopped
1 tsp kosher salt
2 tbsp olive oil
1/2 tsp red pepper flakes ( more or less to taste)
Directions:
1. Heat olive oil in a saute pan.
2. Add the garlic and cook on med/low for about 2 minutes.
3. Add the wet escarole tops and stir well, turning over the leaves until they are bright green and starting to wilt.
4. Add the rinsed beans to the greens and sprinkle with salt and pepper flakes.
5. Stir again well.
6. Continue cooking for about 5 minutes, stirring ocassionally, until all flavours blend.
7. Enjoy!
