Sauteed Chicken with Yellow Grape Tomatoes

Broil slices of packaged polenta to go with the chicken. Round out the main course with an arugula salad and chunks of crusty whole wheat Italian bread. For dessert? Brownies topped with vanilla gelato drizzled with sambuca.
Ingredients:
2 tablespoons olive oil
2 skinless boneless chicken breast halves
1 cup yellow grape tomatoes or 1 cup halved cherry tomatoes
2 garlic cloves, minced
1 tablespoon balsamic vinegar
2 tablespoons chopped fresh basil
Directions:
1. Heat olive oil in heavy medium skillet over medium-high heat. Sprinkle chicken with salt and pepper; add to skillet. Sauté chicken until cooked through, about 5 minutes per side. Transfer chicken to 2 plates. Add tomatoes and garlic to skillet; sauté 1 minute. Add balsamic vinegar and 1 tablespoon basil; sauté 30 seconds. Season sauce to taste with salt and pepper. Spoon sauce over chicken. Sprinkle with remaining 1 tablespoon basil and serve.
