Sausage With Root Vegetables

A smoky dish using Kielbasa Sausage, ideal for using up any old scraps of vegetables left in the fridge.
Ingredients:
250g kielbasa or kabanos
3 large potatoes cubed
4 carrots sliced thickly
4 celery stalks sliced thickly
1 onion cut into eight chunks
1 stalk of spring greens or similar chopped
30g butter
salt and pepper
2 tbsp water
Directions:
1. Melt half the butter in a pan, add Sausage and fry over medium heat for about five minutes.
2. Add all remaining ingredients except butter and stir briefly.
3. Cover and simmer on low heat for 40 minutes.
4. Remove the lid and add remaining butter. Let melt over vegetables and reduce any remaining water over high heat.
5. Taste for seasoning. Serve.
