An idea I had. There are a couple of savory stuffed apples on here but none with sausage. Pork, apples and sage are such good flavors together, why not rearrange them? Not sure on times yet so be cautious. Updates when I make it! Serves 4, or you can use smaller apples to make appetizers.
Ingredients:
4 large apples, gala or fuji
4 slices whole grain bread
1 lb pork sausage
2 large eggs
2 tablespoons fresh sage, minced
1 tablespoon orange marmalade
1 teaspoon cider vinegar
1 teaspoon salt
2 teaspoons pepper
Directions:
1. Preheat the oven to 400 degrees.
2. Trim the bottoms of the apples so that they stand sturdy, then cut a lid off the top of each one, about half and inch.
3. Using a knife or melon baller, hollow out the center of each apple, removing the seeds especially. Toss any edible bits into a mixing bowl.
4. Toast the bread until slightly crunchy, then slice into small cubes.
5. Toss bread and remaining ingredients together into the mixing bowl well.
6. Fill the apples with the pork mixture and bake for 30-45 minutes, unitl the internal temperature is 165 degrees.
