Sausage Stuffed Zucchini

Ingredients:
4 medium zucchihi
1/4 pound pork sauage
1/4 cup chopped onion
1 clove garlic minced
1/2 cup parmesan cheese
1/2 cup crushed saltine crackers
1 egg,lightly beaten
1/4 teaspoon dried leaf thyme,crumbled
1/4 teaspoon salt,or to taste
dash pepper
Directions:
1. Drections for stuffed zucchini
2. Cook whole zucchini in boiling water until just tender,6 to 9 minutes.
3. Cut each zucchini in half lengthwise;scoop out sqush,mash,set aside.
4. Place shells in shallow baking dish.
5. In skillet,cook sausage with onion,drain off excess fat.
6. Stir in mashed zucchini.
7. Reserving 2 tablespoons,Parmesan cheese for topping.
8. Add Parmesan cheese to meat mixture along with remaining ingredients.
9. Mix well.
10. Spoon mixture into zucchini shells;sprinkle with the resvered tablespoons of Parmesan cheese.
11. Bake stuffed zucchini 350* for20-30 minutes.
