high carb recipe for runners...... The recipe called for 8 c of brocoli rabe, but I couldn't find any at my store, so I substituted spinach.
Ingredients:
12 ounces chicken italian sausage links
2 tablespoons olive oil
1/8 cup kalamata olives, coarsely chopped
3 garlic cloves, minced
1/2 teaspoon red pepper flakes
28 ounce crushed tomatoes
12 9/10 ounces penne
12 oz spinach, coarsely chopped
1/2 cup crumbled feta cheese
Directions:
1. Bring sausage, oil, and 1/4 cup water to simmer in a covered large pot over medium-high heat; cook until water evaporates.
2. Uncover and fry sausage, turning until well browned. Remove sausage, cool slightly, and slice 1/2 -inch thick.
3. Add olives, garlic, and pepper flakes to the empty pot. When garlic turns golden, stir in tomatoes and sausage. Simmer partially covered for 10 minutes. Add one quart of water to the sauce; bring to a boil.
4. Add penne and cook partially covered for 10 minutes. Add broccoli rabe; cook, partially covered, until pasta and broccoli rabe are tender, about five more minutes. Serve, topped with feta. Serves seven.
