Sausage Potato And Lima Bean Soup

This is a great tasting and very comforting soup. Especially good in the cold months but we eat it all year long. Hope you enjoy it as much as we do.
Ingredients:
1/2 pound rolled sausage
1 cup potato cubes
1 cup dried lima beans
1 teaspoon salt
7 cups water divided
1 teaspoon black pepper
1 small white onion chopped
dash cayenne pepper
2 cups milk
1 teaspoon chopped fresh parsley
Directions:
1. Place beans and 5 cups water in large saucepan then bring to a boil over high heat and remove from heat.
2. Let stand covered for 1 hour.
3. Meanwhile crumble sausage into medium skillet and add onion.
4. Cook over medium heat until sausage is lightly browned stirring occasionally.
5. Drain off any drippings.
6. Add sausage mixture and remaining 2 cups water to beans and bring to a boil over high heat.
7. Reduce heat to low.
8. Simmer covered for 2 hours.
9. Stir in milk, potatoes, salt, black pepper and cayenne.
10. Simmer covered for 20 minutes.
11. Sprinkle with parsley and serve hot.
