3 cup(s) onions finely chopped
8 ounce(s) button mushrooms coarsely chopped
8 ounce(s) spicy italian sausage
3 1/2 cup(s) white bread day old, cubed
1 1/4 cup(s) chicken broth reduced sodium, warmed
2 whole(s) eggs beaten
1/2 cup(s) fresh parsley chopped
1 tablespoon(s) dried sage
1/4 teaspoon(s) salt
1/4 teaspoon(s) pepper freshly ground
Directions:
1. Heat oven to 350 degrees. Spray 11 x 7-inch glass baking dish with nonstick spray. Cook bacon in large skillet over medium heat 5 to 8 minutes or until lightly browned. Add onions; cook 4 to 6 minutes or until soft. Add mushrooms; cook 3 to 4 minutes or until tender. Cool.
2. Heat medium skillet over medium-high heat until hot. Add sausage; cook 5 to 8 minutes or until lightly browned. Cool on paper towel-lined plate.
3. In large bowl, stir together bread, broth and eggs. Add bacon mixture, sausage, parsley, sage, salt and pepper; stir to combine. Spoon into pan; cover with foil. (Dressing can be made to this point 1 day ahead of time. Cover and refrigerate)
4. Bake 30 to 45 minutes or until heated through. Remove foil during last 10 minutes. (If dressing has been refrigerated, increase baking time 5 to 10 minutes.)
