Whip up this easy recipe with ingredients you have on hand! This came from Woman's World. I have not tried this recipe, but I'm posting it for safe keeping.
Ingredients:
1 lb sweet italian sausage link
3 cups chopped vegetables (carrots, onions, and celery)
1/4 teaspoon pepper
30 ounces fat free chicken broth (2-14 1/2oz cans)
1 cup small pasta (such as ditalini)
19 ounces red kidney beans, rinsed and drained
Directions:
1. Coat pot with cooking spray; heat over medium-high heat. Add sausage; cook, turning, until browned, 4-6 minutes. Remove from heat. Cut sausage into 1/4 -inch thick slices; return to pot over medium heat. Cook, stirring occasionally, until no longer pink, 3-5 minutes; discard fat.
2. Stir in vegetable mixture and pepper; cook, stirring occasionally, until vegetables are just tender, 3-4 minutes. Add tomatoes with their liquid and broth; bring to a boil. Reduce heat to low; simmer 15 minutes.
3. Stir in pasta; cook until pasta is tender, about 15 minutes.
4. Add beans; cook until heated through, 2 minutes.
