Sausage Jambalaya

Classic cajun dish featuring spicy rice & sausage
Ingredients:
2 tablespoons canola oil
4 garlic cloves, minced
1 cup onion, chopped
1/2 cup green bell pepper, chopped
1/2 cup celery, chopped
1 lb smoked sausage, sliced thin
1 (14 1/2 ounce) can diced tomatoes, undrained
1 cup fat-free chicken broth
1 teaspoon kosher salt
1/2 teaspoon dried thyme
1/3 teaspoon cayenne pepper
1 bay leaf
1 cup uncooked rice
1/2 cup scallion, chopped
Directions:
1. Heat oil in large pot.
2. Add garlic, onion, bell pepper, and celery. Cook 5 minutes, stirring often.
3. Add sausage. Cook 3 minutes, stirring often.
4. Add tomatoes (undrained), broth, salt, thyme, cayenne pepper and bay leaf.
5. Bring to simmer and cook 10-15 minutes, stirring often.
6. Add additional salt & pepper if desired.
7. Stir in rice and bring to boil. Reduce to simmer and cover.
8. Cook 20-25 minutes until the rice is done. Stir often.
9. Add scallions and fluff with fork.
