Sausage Hotpot With Apple

My mum uses this recipe to this day and I have no idea where it came from! Serve with baked beans.
Ingredients:
2 lbs potatoes (mashed)
2 lbs sausage (meat only)
2 apples (sliced)
4 slices bacon (chopped)
2 large tomatoes (sliced)
mixed herbs
4 ounces mature cheddar cheese (grated)
fresh ground black pepper
Directions:
1. Preheat oven to 190 degrees centigrade.
2. Fry the bacon pieces until browning.
3. Whilst the bacon is browning, in a casserole dish make a thick layer of the sausage meat and sprinkle the mixed herbs all over this layer.
4. Layer the fried bacon over the top of the sausage meat.
5. Layer the apples and then tomatos over the bacon and season with the pepper. If you like your dishes salty you can add salt at this stage, but due to the bacon I tend not to.
6. top with the mashed potatoes and the grated cheese.
7. Bake in the oven for approx 40 mins until the sausage meat is cooked and the cheese is golden brown.
