I found this recipe in one of my Great Aunt's old cookbooks. I have not tried it yet, but I am posting here for safe keeping. It is from an old newspaper clipping, I have no idea how old it is. According to the article it will keep for weeks in the fridge and is good with cream cheese or apple sauce.
Ingredients:
1 cup raisins
1 lb hot sausage
1 1/2 cups brown sugar
1 1/2 cups white sugar
2 eggs
1 cup chopped pecans
3 cups flour
1 teaspoon ginger
1 teaspoon pumpkin pie spice
1 teaspoon baking powder
1 cup cold coffee
1 teaspoon baking soda
Directions:
1. Preheat oven to 350 degrees.
2. Cover the raisins with water and simmer for 5 minutes, then drain.
3. Mix sausage, brown sugar, white sugar and eggs. Stir in nuts and raisins.
4. Mix flour, spices, and baking powder together.
5. Stir baking soda into coffee.
6. Blend coffee and flour mixture into sausage mixture.
7. Pour into a greased, floured 9-inch tube pan.
8. Bake for 1 1/2 hours.
