Sausage Apple Pecan Stuffing

The smell of fresh herbs and onions will fill the house with the pleasant aroma of sweet tart apples and nutty pecans when you finally sit down for the roasted turkey and take your first bite of this stuffing your taste buds with sigh with delight as they sing from the sage and rosemary with toasted pecans and fresh apples not to mention the savory sausage, I have know folks to fill there plate with just my stuffing as there first helping only to come back after they finish for the turkey and trimmings. Ingredients:
2 loafs white bread – cubed 1/2 inch and toasted light brown
2 large yellow onions– diced
5 stalks of celery trimmed keep leaves – diced
1 red pepper – diced
2 cloves minced garlic
1 orange pepper - diced
2 pounds ground sausage
2 large cameo apples (or sweet/tart apples) – diced 1/4 inch cubes
2 cups chopped pecans
1/2 pound unsalted butter - melted
salt – to taste
white pepper – to taste
4 leaves of fresh sage chopped
1/4 cup tsp fresh rosemary stems removed
1/4 fresh basil chopped
1/8 cup fresh oregano stems removed and chopped
1 qt fresh turkey stock made from neck bon and giblets
Directions:
1. 1) Brown sausage in skillet and transfer to meat to bowl set aside to cool
2. 2) Add onion, celery and peppers to hot sausage oil and sauté till onions are slightly opaque add apples and pecans, garlic and herbs and sauté until onions are browned tossing continuously, remove and add to toasted bread cubes.
3. 3) Crumble cooked sausage and add to bread crumbs
4. 4) Add melted butter to bread cubes and toss to mix
5. 5) Add turkey stock as needed to bread cubes to lightly moisten entire mix tossing and mixing till you can form a nice moisten bread ball in your hand
6. 6) Salt and pepper to taste and toss again
7. 7) Stuff turkey cavity loosely and with the remaining stuffing transfer to a lightly greased 9 x 13 casserole dish cover with aluminum foil and bake at 350 for 45 min, then uncover and bake for 15 to 20 min more or until golden brown on top
