Sausage, Apple, and Cheddar Bread Pudding

This recipe was featured in an email from Cooking Light. This dish is reminiscent of holiday stuffing. Leave the peel on the apple for color and texture.
Ingredients:
8 ounces italian turkey sausage
2 cups granny smith apples, chopped
1 cup onion, chopped
2 cups 1% low-fat milk
1 cup egg substitute
3/4 cup sharp cheddar cheese, shredded, divided
1/4 cup fresh parsley, chopped
1/4 teaspoon salt
1/8 teaspoon black pepper
9 cups sourdough bread cubes, day old
Directions:
1. Preheat oven to 350°.
2. Heat a large nonstick skillet over medium-high heat. Remove casings from sausage. Add sausage to pan; cook for 4 minutes or until browned, stirring to crumble. Stir in apple and onion. Cover and cook over low heat 5 minutes or until apple is crisp-tender. Remove from heat; cool slightly.
3. Combine milk, egg substitute, 1/4 cup cheddar cheese, parsley, 1/4 teaspoon salt, and 1/8 teaspoon black pepper in a large bowl, stirring with a whisk. Stir in sausage mixture. Add bread, and stir gently to combine. Let stand 10 minutes. Spoon into a 2-quart baking dish coated with cooking spray. Sprinkle with remaining 1/2 cup cheese.
4. Bake for 45 minutes or until pudding is set and lightly browned.
