Sausage and Herb Stuffed Pork

Ingredients:
1/2 lb sausage, casings removed
1/2 cup breadcrumbs
2 tablespoons fresh parsley
1/2 teaspoon thyme
1/2 teaspoon marjoram
1 teaspoon black pepper
4 pork tenderloin
cooking spray
Directions:
1. Trim the pork.
2. Coat the grill with cooking spray and preheat for 5 minutes.
3. In a medium mixing bowl, combine the sausage, breadcrumbs, parsley, thyme, marjoram and pepper.
4. With a sharp knife, cut a slit sideways almost completely through each tenderloin to create a pocket.
5. Open the tenderloins and place 1/4 of the sausage stuffing inside each.
6. Press the edges of the pockets to close.
7. Grill the tenderloins for 6-8 minutes or until the pork and stuffing are completely cooked.
