Sausage and Cheese Egg Bake

This breakfast dish may fill you for the day. At a breakfast or brunch gathering, all that will be left....is an empty baking dish. Other sauteed vegetables such as mushrooms, green onions, peppers, etc. may be added or substituted and any sort of crumbled cooked sausage, sauteed cubed ham, pastrami, or even cooked hamburger meat may be used. Have fun, experiment with this recipe.
Ingredients:
8 slices sourdough bread (cut into 1/2 - 1 inch cubes)
1 1/2 cups cheddar cheese (grated. any other cheese may be substituted.)
10 -14 large eggs
2 cups milk
2 teaspoons dry mustard
1/8 teaspoon salt
1/8 teaspoon pepper (more or less as desired)
2/3 cup diced onion (saute onions until translucent or bit more as desired)
3/4 lb breakfast sausage (cook sausage separately, then drain and crumble. any preferred sausage may be substituted.)
1/8 ounce nonstick cooking spray
Directions:
1. Cook sausage then drain, crumble or thinly slice, then set aside.
2. Saute onions and other desired vegetables if any, and set aside. The first two steps can be done ahead of time and refrigerated until needed.
3. Preheat oven to 350 degrees F.
4. Spray 13 x 9 glass pan with cooking spray.
5. Cover the bottom of the pan with the cubed sourdough bread.
6. Layer 1/2 of the grated cheese on top of the bread.
7. Layer sauteed onions (and other vegetables) on top of the cheese.
8. Layer crumbled sausage on top of the onions.
9. Layer the remaining cheese over the sausage.
10. Beat together the eggs, milk, dry mustard, pinch of salt, pepper to taste, and then pour over everything in the pan.
11. Bake for 40 - 50 minutes until center is firm and top slightly browned.
