Saucy Spinach Curry

Ingredients:
oil (for frying)
3 cups chopped spinach
1 cup chopped basil
1 (400 ml) can chopped tomatoes
2 tablespoons fermented black beans
3 tablespoons peanut butter
1 crushed garlic clove
1/2 teaspoon curry masala
1/4 teaspoon garam masala
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon ground coriander
Directions:
1. heat oil.
2. add spices and toast lightly.
3. stir in spinach, basil and garlic.
4. stir fry cook on moderate heat.
5. add tomato, peanut butter and fermented black beans.
6. let simmer for 15 minutes on low heat.
7. stirring occasionally to prevent sticking.
8. serve on a bed of brown organic rice.
