We loves green bean or asparagus served this way, and while this is not the healthiest way to eat our veggies, it sure is tasty! My niece gave me this recipe many years ago. My personal preference is the green beans, but it's good with either (and many other veggies, I'm sure, would work well, too).
Ingredients:
1 pound fresh green beans (or fresh asparagus)
2 tablespoons finely diced onion
1 teaspoon butter
1/4 cup white wine
1 tablespoon instant minced onion
3/4 cup miracle whip
1 teaspoon fresh squeezed lemon juice
1/4 cup chopped cashews
Directions:
1. Wash, trim and cut fresh green beans (or asparagus) into desired size. Cook in enough water to keep the pan from going dry, until the bean are tender but still a bit crisp.
2. While veggie are cooking, saute diced onions In a separate pan until golden.
3. In another saucepan, pour white wine over minced onion and let stand for 5 minutes; turn the burner on to medium heat and stir Miracle Whip and lemon juice into minced onions/wine mixture - heat sauce just to boiling point (do not allow to boil!)
4. to serve, place drained green beans (or asparagus) on serving platter and top with sauce, then top with cashews and sautéed onions.
