An easy Bechamel.
Ingredients:
1 tablespoon butter, unsalted and clarified (generous)
1/2 tablespoon flour
salt
pepper
1 cup table cream
2 tablespoons swiss cheese, grated
Directions:
1. Combine butter and flour in a heavy saucepan.
2. Slowly stir in salt, pepper and cream, until blended.
3. Add cheese and stir to combine well.
4. Heat over medium-low heat, stirring constantly, until cheese is melted.
