Satisfying Satay Chicken Lettuce Wraps

This recipe is my dead-on copycat of Kinari's legendary lettuce wraps Delicious healthy thai chicken and mushroom filling will rock your socks off! Fill a romaine lettuce leaf to create a boat of amazing flavor! Healthy and delicious!
Ingredients:
2 whole chicken breasts, seasoned with salt and pepper
3 tablespoons olive oil
2 tablespoons garlic, minced
1/4 lb fresh white mushroom, chopped fine
1 bunch green onion, thinly sliced
1/4 cup peanuts, chopped fine
1 large carrot, grated
1/2 inch gingerroot, grated (or, substitute powdered ginger)
1/2 cup chicken broth
1/4 cup soy sauce
3 tablespoons peanut butter, creamy
1/8 teaspoon red pepper flakes, optional. more if you like it spicy
2 romaine lettuce hearts, leaves separated
Directions:
1. Heat the olive oil and add the garlic to fuse flavors. Add chicken and brown in the oil. Season with sea salt and pepper.
2. While the chicken is browning, use a food processor and chop mushrooms, add grated ginger. Once browned, toss the chicken into the food processor and chop fine.
3. Return all ingredients to the pan. Toss and cook until flavors are blended.
4. Wash and cut the ends off of the lettuce. Fill the lettuce leaves with the the mixture and enjoy!
