A recipe I have made many, many times, either as patties or as large burgers to have as vegetarian burgers. You can make it as spicy as you like. I usually make up large quantities and place them in the freezer to have on hand as required. I love it served with plum sauce.
Ingredients:
1 onion, chopped
2 cloves garlic, crushed
1 tablespoon oil
2 eggs
3 tablespoons peanut butter
2 teaspoons chili sauce
1 tablespoon soya sauce
2 tablespoons lemon juice
2 cups cooked chickpeas
1 1/2 cups cooked rice
1/2 cup finely chopped celery
1 cup grated cheese
whole wheat flour
1/2 cup sesame seeds
1/2 cup whole wheat flour
Directions:
1. Saute onion and garlic in oil until onions are soft.
2. Place in food processor with the next six ingredients.
3. Mix well.
4. Put into large bowl and add the celery, rice and enough flour to bind.
5. Shape into patties/burgers and coat with the sesame seeds and flour mixed together.
6. Cook 3-5 minutes on each side.
7. Serve with sauce of your choice.
