Great for Lunch or a light Supper!
Ingredients:
2 large nectarines or peaches, pitted, do not peel (may use frozen)
3 large plums pitted, do not peel
3 tbsp apricot preserves
5 tbsp dijon mustard
1/4 tsp dried chili flakes
salt & pepper, to taste
juice of 1 lemon (or) lime
1 pound cooked shrimp(may use cooked, frozen, defrosted)
Directions:
1. In a blender, combine ingredients for sauce and puree
2. Put shrimp in large bowl, and fold in sauce
3. This may be served warm over cooked rice (or) cold over a plate
4. of greens
