I live on the West Coast of France, and the area is famous among other things for its' canned sardines! Canned sardines from the nearby St Gilles Croix de Vie were the first to recieve the prestigious Label Rouge guarantee of quality in France. This recipe is delicious and though I've used local ingredients throghout, you could easily replace them with a top quality brand of your choice, it's a very easy recipe, with fab results, the little touch of curry is a dream - I hope you'll enjoy it!
Ingredients:
sardine pate (for 4 people)
2 (100 g) cans sardines in oil
80 g fromage frais (gervais, if possible)
2 pickling onions, finely minced (or 2 shallots)
1 lemon
1 teaspoon curry powder
Directions:
1. Drain off the oil and set aside. Remove the bones.
2. I couldn’t find any Gervais so went for a fresh local goat’s cheese from Challans for a bit of ooomph. Use about 80g.
3. Add the cheese, about half of the reserved oil, and the lemon juice. Use a fork to mix well. Add the minced shallots and the curry and mix well.
4. Leave in fridge for 3 hours, then serve on little toasts.
