This is a great light dressing. My favorite way is to serve this over, fresh melon; such as cantaloupe, watermelon, and honeydew and add some kiwi, mango, papaya, and even blueberries and strawberries. I really try to use what is in season. This is also perfect over a spinach salad with seasonal fresh fruits. I had this at a small Winery in FL for lunch. It was served over springs greens with fresh fruits and a side of cheeses. They were nice enough to give me the recipe.
Ingredients:
1 1/2 cups honeydews, diced
1 1/2 tablespoons plain yogurt (add a little more if you like it more creamy)
2 tablespoons honey
2 tablespoons orange juice
1 tablespoon lime juice (you can substitute with lemon as well)
1 1/2 teaspoons poppy seeds (add a few more if you want)
1 pinch ground cinnamon
1 pinch ground ginger
Directions:
1. Dressing - Just add everything to a blender and pulse until mixed well.
2. Chill and enjoy over your favorite fruit salads.
