Sarasota's Easy Peachy Bruschetta

This is so easy and inexpensive. A great alternative to the tomato, artichoke or heavier bruschettas. This has a fresh taste with a little crunch as well. A little chopped mint is optional, but is very nice and adds a lot of flavor. Now, I honestly prefer frozen peaches for this, they are always available and work great for this, but if you have fresh peaches by all means go ahead and use them. Note: I'm not giving amounts for this recipe, because it depends on the size of your baguette and how many you are making. Basically 2 peach slices, 2 teaspoons nuts, 1 teaspoon peach jam, and 1-2 teaspoons goat cheese per slice, but that can really vary. So top the crostini as you like. There is no right or wrong for this.
Ingredients:
baguette, cut in thin slices and lightly toasted (i like to cut mine on an angle)
goat cheese (1-2 teaspoons per crostini)
peach jam (1 teaspoon per crostini)
peach, frozen (2 slices per crostini)
honey (1-2 tablespoons warmed)
pecans, chopped fine (2 teaspoons per 2 peaches)
mint, fine chopped (optional)
Directions:
1. Peaches - Take the frozen peaches, thaw in a colander until close to room temperature Dip in honey that you have slightly warmed in the microwave and dip in the chopped pecans on both sides. Set off to the side on a plate lined with parchment paper so they don't stick.
2. Baguettes - Toast your baguette slices, whether it is in the broiler, oven or grill. Whatever you feel comfortable with. I prefer the broiler. Just a few seconds on each side is all you need.
3. Jam and Cheese - Spread the warm baguette with a very thin layer of the peach jam and then the cheese and top with 2 of the peach slices coated with the pecans. Sprinkle with chopped mint and serve. ENJOY!
