Sarasota's Easy Fruit Sauce With a Kick

This is a very easy great fruit sauce to add to your breakfast or even dessert favorites. It is sweet but not too much, with a touch of rum if you are daring - I love it. Perfect over french toast, waffles, pancakes, grilled pound cake (my favorite) or plain is fine, angel food cake for a light twist. Or the best for last ... ice cream! Fresh is best of course, but I have used this recipe with frozen strawberries and I often freeze my mangoes when I am overwhelmed and they do work fine. Rum, use what you have, but I prefer a golden rum as it has a bit more subtle flavor. That is a personal preference. And by all means ... how much sugar or honey you add depends on how sweet/ripe your fruit is. And the best part ... make ahead and then reheat in the microwave - it takes just a minute.
Ingredients:
2 -2 1/2 cups strawberries, fresh, rough chopped (frozen will also work, but please thaw)
2 cups mangoes, fresh rough chopped (same thing, frozen is ok, but please thaw first)
1 tablespoon brown sugar (i use light brown)
1 tablespoon rum (golden rum)
honey, to taste (approximately 1 teaspoon)
1/8 cup water
1 pinch salt
Directions:
1. Fruit - Now this is a basic NO recipe - recipe. It can be made with more or less strawberries or mango and even pineapple. About 4 cups (more or less fruit is what you need). Fresh peaches, blueberries, cherries - all fresh fruit works for this. Keep the sugar the same, but more or less honey depending on how sweet you like it. It really depends on the sweetness of your fruit. Also, rum, I like golden rum, but if you don't want alcohol - use an extract or even use almond extract, that is a nice flavor. I happen to like rum in mine.
2. Just add everything but the rum (or extract) in a small pot and simmer on medium low for about 15 minutes (uncovered). Then add the rum or extract and cook another 5 minutes. Done! The fruit will be broken down and you can even mash it up a bit more if you want with a fork or a potato masher. It just depends how you like it as far as the texture goes. I like mine a bit chunky.
3. Serve - Pour over cheese blintzes, waffles, pancakes, great with monte cristo sandwiches, over ice cream, and french toast. Easy to make ahead and then just reheat in the microwave. ENJOY!
