A layered salad you can tweak to your liking. Feel free to use broccoli, cauliflower, carrots, or any raw vegetable you think would work well. This is one of my specialties. I'm frequently asked to make this salad for potlucks, parties, holiday dinners, etc.
Ingredients:
1 head of lettuce, or mixed variety
1/2 cup chopped green pepper
1/2 cup chopped onion
1/2 cup chopped celery
10 oz pkg of frozen peas
1 pint of real mayonaise
2 tablespoons sugar
1/2 cup of parmesan cheese
4 slices of cooked bacon, use more if desired.
Directions:
1. Plan ahead. This salad is not meant to be prepared and served the same day.
2. Cook bacon and cut into small pieces
3. You'll need a 9x13 inch dish, or a large bowl.
4. For peas, make sure to run under hot water for 2 minutes in a strainer before adding this layer.
5. Layer ingredients in order. (For the last three ingredients, sprinkle the sugar in an even layer, sprinkle Parmesan cheese in an even layer, then sprinkle bacon)
6. Use as little or as much Mayo according to your taste. I use just enough to cover the green peas. (Keep in mind that the layer of sprinkled sugar will absorb into the Mayo, which will alter the normal taste of Mayo, so if you normally do not like mayo, you may like this salad due to the combination of flavors from the sugar as well as Parmesan cheese, and bacon.
7. Seal tightly with plastic wrap and refrigerate overnight.
8. Serve chilled. If desired, toss and serve immediately.
