Delicious italian tuna pasta, with capsicum, mushroom & garlic! YUM! Because the tuna can't be found in the database, CC counts the calories wrong, per serving this meal is approx 638 calories (i think!?) The nutritional information for the tuna is at the link above. I haven't listed the tuna in the actual recipe because CC can't calculate it. I have a separate entry in my foods list that i add as well as this, and i encourage you to do the same. :) You need 2 tins of the tuna for this recipe. (one tin per serve)
Ingredients:
1/2 cup penne pasta (dry)
1/2 medium red capsicum, chopped into short slices
1 clove garlic, finely chopped
4 button mushrooms, chopped
1 dash salt
1 dash pepper
1/2 tsp oil
15 g edam cheese, grated
Directions:
1. Start by cooking the pasta in a pot of boiling salted water.
2. Chop up the garlic clove very finely (or mince it), and slice the capsicum first into strips, then into chunks by chopping each strip into 3.
3. Grate your cheese and put aside
4. Peel (if desired) your mushrooms and chop into thick-ish slices.
5. Add oil, garlic and capsicum to a wok or large frying pan (you'll be adding in the pasta later, so it needs to be large), saute and then add mushrooms and cook til mushrooms are almost done. add a little salt to bring out the flavour of the mushrooms.
6. Add in tuna, and cook until pasta is ready.
7. Drain and add pasta to the tuna. Stir around, and sprinkle over the grated cheese, mixing until it is just melted.
8. Serve, season with a little freshly ground black pepper, then eat!
9. Yum!
