This is a moist cake.
Ingredients:
1 1/2 cups shortening
2 cups sugar
4 eggs
1 teaspoon cinnamon
1 teaspoon allspice
1/2 cup pecans
2 cups flour
1 1/2 teaspoons baking soda
3 cups grated carrots
Directions:
1. Cream the shortening and sugar together.
2. Add eggs then dry ingredients.
3. Stir in pecans and carrots.
4. Place in a greased 9x13 inch pan.
5. Bake at 350 degrees for 1 hour.
6. When cool frost with a cream cheese frosting.
