This is a wonderful cake that doesn't even require frosting. Would be fine served with coffee in the mornings or add a scoop of vanilla ice cream for a wonderful after dinner dessert. This recipe was originally made with pears.
Ingredients:
3 cups apples (cooked, cubed, mashed until chunky, peeling on)
1 cup vegetable oil
2 eggs
1 cup brown sugar
1 cup sugar
2 cups self rising flour
1 teaspoon vanilla
1 tablespoon water
1/4 teaspoon nutmeg
2 teaspoons cinnamon
1 cup walnuts (chopped) or 1 cup pecans (chopped)
Directions:
1. Beat the two eggs with oil.
2. Beat in sugar, vanilla, nutmeg, cinnamon, and then flour.
3. Beat in cooled cooked pears or apples.
4. Mix in Walnuts or Pecans.Recipe only calls for 1 cup but more would make it better.
5. Pour into greased 9 x 13 baking dish or pan.
6. Bake at 325 degrees for 45 minutes or until done.
