Is it a salad or a not-very-liquid Salsa? You decide. Anyway you call it, it's colorful, delicious, and folks will be coming back for more! Ingredients:
1 can white hominy, drained and rinsed |
1 can black beans, drained and rinsed |
1 can (4 oz) diced green chiles |
2 cups cherry of grape tomatoes |
1 green bell pepper, diced |
1yellow or orange bell pepper, diced |
1 red onion, diced |
1 cup salsa verde, green chile enchilada sauce or green taco sauce |
1 bag blue corn tortilla chips |
Directions:
1. In a large bowl toss to combine everything except the last two ingredients 2. Arrange mixture on a large platter. 3. Surround mixture with a ring of Blue Corn chips 4. Top dress the mixture with the 'green sauce' |
