Ingredients:
1 (10-3/4 oz) can cream of mushroom soup, undiluted
1 cup(s) (4 oz) shredded monterey jack cheese
1 (4.5 oz) can chopped green chiles, drained
1 (8-3/4 oz) can cream-style corn
2 cup(s) chopped cooked chicken
3 cup(s) cornbread stuffing mix
2 teaspoon(s) ground coriander
2 teaspoon(s) ground cumin
1/2 jar roasted red bell peppers, drained & chopped
pico de gallo & salsa
1 cup(s) sour cream
tortilla chips (optional)
Directions:
1. STIR together first 5 ingredients in a large bowl; stir in soup & next 3 ingredients. Spread in a lightly greased 2-qt. shallow baking dish.
2. BAKE, covered, at 350 for 25 minutes or until thoroughly heated. Uncover & sprinkle evenly with cheese; bake 5 more minutes or until cheese melts.
3. SERVE with tortilla ships & pico de gallo & salsa, if desired.
