Samhain Mushroom Casserole

Lady Ashley's Samhain casserole makes a great side dish as it is, or you can add chicken (or turkey) to make a complete meal.
Ingredients:
1 8oz package mushrooms (if you want to be really creative, use a few different types of mushrooms)
1 small package frozen artichoke hearts (or canned packed in water, as long as they are not marinated)
1 can asparagus (fresh or frozen can also be used) (personally, i don't care for asparagus, so i leave them out)
1 can cream of mushroom soup
1/2 to 1 cup of sour cream
salt, pepper & garlic to taste
cooked rice
Directions:
1. Wash the mushrooms and cut into quarters. Place in casserole dish. Add artichoke hearts and asparagus on top of mushrooms.
2. In a separate bowl, combine soup, sour cream, salt, pepper and garlic. Stir well then our over veggies.
3. Cover casserole dish and bake at 350 for about 45 minutes, until hot & bubbly all the way through and the mushrooms are tender.
4. When the casserole is almost done, cook up some rice.
5. Spoon mushroom mixture over rice and enjoy!

7. This recipe is also great with chicken. Just add 3 or 4 chicken pieces, such as split breasts. Pour veggies and soup over the top and bake until the chicken is done (about an hour). Serve over rice.
