Ingredients:

Directions:

  1. Combine peanut butter, honey, butter, vanilla and lime juice in small saucepan.
  2. Heat over low heat, stirring well, until melted.
  3. Combine all remaining ingredients in large glass bowl. Mix well to distribute flour and salt.
  4. Pour peanut butter mixture into dry ingredients and stir to coat and combine.
  5. Press mixture firmly into mini muffin tins that have been lightly sprayed with no stick spray or olive oil mister.
  6. Fill to top, as these don't rise, and make sure to press firmly so they bake up firm.
  7. Bake at 350 for about 15 minutes, until edges are just browning and they are firming up, slightly.
  8. Carefully run a toothpick along the rim of each cup, but don't try to remove bites, yet.
  9. Let cool completely, then they should just pop right out, using a toothpick to get them started.
