Salted Nut Roll

Delicious and easy. Great for your holiday gift baskets.
Ingredients:
4 teaspoons butter or 4 teaspoons margarine
1 (10 ounce) bag marshmallows
2 cups powdered sugar (more may be needed)
1/2 teaspoon vanilla
3 cups chopped salted peanuts
48 caramels
2 tablespoons water
Directions:
1. Melt half the butter.
2. Add marshmallows, stirring until melted.
3. Add vanilla.
4. Mix with powdered sugar to make a smooth, workable dough.
5. Add 1/2 cup peanuts.
6. Shape into 2 rolls.
7. Place 1/2 of remaining peanuts on a sheet of plastic wrap, a little longer than a roll.
8. Melt 1/2 the caramels with 1 T. of water and 1 T. of butter.
9. Pour over the peanuts.
10. Place one roll on the caramel and bring up the sides of the plastic wrap to cover the roll with the caramel and peanuts.
11. Press the nuts firmly into the caramel.
12. Repeat the process to cover the other roll.
13. Refrigerate, and slice when ready to serve.
