Salt And Pepper Squid With Lime Dipping Sauce

Directions:

  1. To make the dipping sauce, combine mayonnaise, lime juice and zest and sweet chilli sauce. Set aside. Heat 2cm of vegetable oil to 190 C in a deep saucepan.
  2. Mix together the flours and salt and pepper in a large bowl. Use a whisk to gradually mix in the soda water to form a slightly lumpy batter.
  3. When the oil is at temperature, work in batches to lightly coat the frozen squid in batter before placing in oil. Fry the squid, turning occasionally, for 2 min or until golden and crispy.
  4. Remove squid with slotted spoon or tongs, drain on paper towel. Serve with salad, dipping sauce and lemon wedges.
