Salsa Turkey Loaf

This recipe was copied from a magazine while I was waiting in the doctors office. I think it was in Canadian Living. I always meant to try it and now I am posting for safe keeping.
Ingredients:
2 eggs
3/4 cup salsa, medium chunky
1/2 cup italian breadcrumbs
1/2 onion, grated
1/2 green pepper, finely diced
1/2 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon pepper
1 1/2 lbs ground turkey (or chicken)
1/2 cup monterey jack cheese, shredded
Directions:
1. Preheat oven to 375 degrees.
2. In a bowl using a fork, lightly beat eggs. Mix in 1/4 cup of salsa, breadcrumbs, onion, green pepper, chili powder, pepper, salt, and thyme.
3. Mix in turkey, incorporating evenly throughout. Shape into meatloaf pan. Add remaining salsa to top of loaf. Sprinkle with cheese.
4. Bake in oven for approximately 1 hour and 20 minutes. Cover with foil for first hour and then remove so cheese browns.
5. Let stand five minutes before serving.
