Salsa Cruda with Jicama Chips

Fat free crunchy alternative to potatoe chips and dip
Ingredients:
1 cup fresh plum tomato, seeded and chopped
1/2 cup v8 vegetable juice
1/4 cup lemon juice
2 cloves garlic, minced
2 tablespoons tabasco sauce
2 green onions, chopped
1 lb jicama, peeled,sliced into round disks
Directions:
1. Mix all ingredients except jicama together in a bowl.
2. If not serving immediately, sprinkle some lemon juice over the jicama to keep it fresh looking.
