Another quickie for a winters fix.
Ingredients:
3 large tomatoes, cored and halved
1/2 cup red onion
2 cloves garlic
2 jalapenos, seeded and minced
3 teaspoons cilantro
1 teaspoon vegetable oil
1 teaspoon lemon juice
salt and pepper
Directions:
1. Squeeze out the seeds and place them cut side down and roast under a broiler till skins brown/blacken.
2. Cool Peel Chop Mix with other stuff.
3. Let stand 15 minutes.
4. Toss well.
