Have this great bread for your next mexican meal or fiesta party.........it is great tasting ................. courtesy pillsbury........
Ingredients:
3- eggs
1/2- cup cornmeal
2/3- cup buttermilk
1/2- cup butter softened
1- ( 16 ounces) jar of mild salsa well drained
1/2- cup chopped ripe black olives
1/4- cup chopped green onions
1- tablespoon chopped fresh parsley
6- ounces shredded cheddar cheese
1/4 to 1/2- cup shredded monterey jack cheese i like more cheese i use 1/2 .........
2- cups all-purpose flour
1- cup mashed potato flakes
4- teaspoons taco seasoning mix
3- teaspoons baking powder
1- teaspoon baking soda
1/4- teaspoon salt
1/4- teaspoon pepper
Directions:
1. Preheat oven to 350 degrees f....................
2. grease and flour a 10 inch tube or bundt pan....................
3. in a large bowl, beat eggs at high speed for 1 minute...........
4. add cornmeal, buttermilk,and salsa..........beat 1 minute at medium speed or until well blended.....................
5. with a spoon, stir in olives , onions , parsley and cheeses...........
6. in a medium bowl , combine flour and all remaining ingredients; mix well...............
7. add to salsa mixture, stir until well blended................
8. sppon batter into the greased -floured pan................
9. bake at 350 degrees for 45 to 50 minutes or untila toothpick inserted in center comes out clean..........
10. cool 15 minutes .........remove from pan
11. cool 20 minutes or less
12. serve warm...........
13. serves 24 slices.........
