Tired of paying so much for a little tub of fresh salsa ? I have perfected after many tries, this one - it gets raves, warning, addictive substance.....
Ingredients:
6 roma tomatoes.
1/2 green pepper
1 stalk celery
6 scallions with some of the green part.
one carrot
fresh cilantro
1/3 can tomato paste (the small 6-oz. can) freeze the rest in the
can for your next salsa)
1 can (4 oz.) chopped green chilies, mild.
do not drain.
2 teaspoons red wine vinegar.
juice of 1/2 lime.
1/2 teaspoon crushed garlic (the kind in the jar)
2 teaspoons light olive oil.
2 teaspoons sugar.
1 teaspoon salt.
1/4 teaspoon pepper.
1/4 teaspoon oregano.
4-5 shakes tabasco. (red bottle)
for serving: 1 bottle of the green tabasco, for individual preference.

Directions:
1. In Cuisinart, chop the tomatoes, put in a bowl.
2. Then chop the green pepper, celery & scallions.
3. Shred the carrot.
4. Hand-chop some fresh cilantro, making finely chopped about 1/3 cup.
5. (ok to use some of the stems,,)
6. Combine the vegetables all in one bowl.
7. In a separate bowl, combine the tomato paste, green chilies, vinegar, lime juice, garlic, olive oil, sugar, salt, pepper, oregano and Tabasco.
8. Mix all together well.
9. Chill well and serve with the extra bottle of green Tabasco for those who may like a sprinkle of more heat .
