a simple salsa recipe. takes 15 minutes including cook time. I got this from a mexican cook and have used it for years
Ingredients:
6 ripe red med. tomatoes
5 med. serrano peppers
1 med white onion
1 bunch cilantro/ 1 1/2 cups
2 tbls salt
Directions:
1. IN TWO QUART SAUCE PAN BRING APPROX. 1 1/2 QUARTS
2. WATER TO A ROLLING BOIL W/PEPPERS ADDED
3. ADD TOMATOES & COOK UNTIL SKIN SPLITS (BLANCH).
4. IMMEDIATELY SKIN TOMATOES .
5. RINSE CILANTRO AND CLEAN OF STEMS ADD TO BOTTOM OF BLENDER. NEXT ADD SOFTENED SERRANO PEPPERS TO BLENDER,
6. THEN ADD TOMATOES ON TOP. PULSE THE BLENDER TO GET THE DESIRED CONSISTENCY (CHUNKY OR THINNER IF DESIRED)
7. DICE ONION AS THIN AS POSSIBLE ( 1/8 IS FINE) ADD TO SALSA.
8. STIR IN SALT. It will be very 'hot' the first day but mellows overnight
9. adjust peppers as required for your taste
