I had made up my mind to try to experiment with my own recipes for dinner over the next few weeks and this is one of my creations. I love food from different countries and took some inspiration from the dishes I have tried in my travels. This is one of my dad's favorites, hope you love it!
Ingredients:
1 (2 lb) package frozen seasoned salmon
3 ripe mangoes
1 bunch cilantro
2 limes
4 garlic cloves
1 onion
1 (8 ounce) bag brown rice
Directions:
1. Place your salmon skin side down on the grill ( you can use aluminum foil to keep it from falling through depending on size).
2. First slice all of your mangoes into a bowl, you are just getting them off of the seed.
3. Chop your onion and rinse the cilantro.
4. Put about 1/3 of those into the food processor and add the juice from your limes, the garlic cloves minced, and the cilantro. Let it go until it is almost liquid. Add the chopped onion to this mix in a bowl.
5. When the salmon is close to finished spoon your desired amount of the cilantro onto the tops of the filets (I used about 1/3 of my mix).
6. Place the rest of your mangoes in an aluminum foil bundle with the rest of the cilantro mix on the grill to heat them.
7. Serve with rice.
