Salmon With Garden Sauce

An easy dinner entree that could be served at an elegant dinner party. No one could guess it was so simple to throw together. It also holds up well with light mayo and light sour cream.
Ingredients:
1 cup fresh parsley leaves
2 cups fresh spinach leaves, well washed
1/2 cup mayo
1/3 cup sour cream
1 tbls fresh lemon juice
3/4 ts salt, divided
4 salmon steaks, 6 ounces each and about 3/4 thick
Directions:
1. Bring a medium sauce pan of water to a rapid boil over high heat
2. Plunge spinach leaves into water just until wilted, approx 10 secs.
3. Rinse under cold running water and drain well.
4. Transfer spinach and parsley to a blender or food processor.
5. Add the mayo, sour cream, lemon juice and 1/4 ts salt to the mixture in the blender.
6. Blend or process until smooth.
7. Chill for at least 30 minutes up to 12 hours
8. Preheat broiler.
9. Sprinkle the salmon steaks with the remainder of salt.
10. Place on broiler pan and broil 6 from heat, turning once just until cooked through, approx 8 minutes.
11. Transfer to serving plate and spoon the sauce over the salmon steaks or could serve the sauce on the side depending on preferences.
