Salmon With Cucumber Salad And Dill Sauce

Ingredients:

Directions:

  1. Combine sour cream. 2 Tbl dill, 2 Tbl rice vinegar, shallots, rind, juice and garlic in a bowl , stirringwell; cover and chill
  2. Sprinkle fish evenly with salt and pepper
  3. Heat a large non-stick skillet ver medium high and coat pan with a small amount of olive oil
  4. Add fish to pan and cook for 5 minutes
  5. Turn fish over and cook an additional 3 minutes
  6. Remove from heat
  7. Add wine; cover and let stand 3 minutes until fish sflakes easily with a fork or it reaches preferred doneness
  8. While fish is standing
  9. Use a vegetable peeler and shave cucumber lengthwise into ribbons to yield about 2 cups
  10. Combine cucumber with remaining 1 Tbl rice vinegar and dill in a bowl; toss gently to coat
  11. Place about 1/2 cup cucumber mixture on each of four plates; top with a fillet and 2 Tbl of sour cream mixture
