Salmon With Caramelized Onion and Strawberry Relish

I know. i know. Sounds strange, but this is absolutely delicious and so easy to make. Its great for dinner parties because you can make the relish ahead of time and the fish only takes a few minutes
Ingredients:
1 large sweet onion, sliced in 1/2 rounds
1 cup white balsamic vinegar
1 pint strawberry, sliced
2 lbs salmon fillets
2 teaspoons olive oil
1 teaspoon butter
Directions:
1. In a sauté pan melt the butter and oil and cook onion on low, stirring occasionally until caramelized. This can take a very long time (45mins or so).
2. While you are doing this, reduce vinegar in a small saucepan to 1/4 cup or less. It should be syrupy and able to coat the back of a spoon.
3. Cut the salmon into 4 equal portions. And score the skin side with a sharp knife.
4. Remove onions from pan and turn heat up to medium high. Add more oil if necessary. No need to wash the pan.
5. Add salmon skin side up and sear for 2-4mins. Flip the salmon and cook skin side down for 3-5mins depending on how thick your filets are.
6. Stir onions, strawberries and balsamic together and serve over the salmon.
